Thorly Cramp, a talented chef hailing from the picturesque South Dublin, originates from the charming hamlet of Bray. With a journey that began in 1997 as a backpacker in Australia, Thorly's connection with the world of culinary arts has evolved into a lifelong passion.

 

Thorly's love for cooking was deeply influenced by his mother and aunties, who were gifted cooks in their own right. Their culinary prowess served as the initial spark for his culinary journey. Over the years, Thorly's appreciation for food and his dedication to the craft have only grown.

In his approach to cooking, Thorly adheres to a simple yet profound philosophy. He firmly believes in the quality of ingredients as the cornerstone of any great dish. With a network of trusted suppliers, he sources the finest produce available, recognising that the true essence of good cooking lies in letting exceptional ingredients shine.

Thorly's culinary expertise was further honed during his tenure at Chapter One, one of Dublin's premier dining establishments, as well as his roles at Opera Kitchen in Sydney's Darling Harbour and at the exclusive New South Wales Golf Club in the beautiful peninsula of La Perouse. These experiences allowed him to immerse himself in the art of fine dining, learning from the best in the business.

As Thorly contemplates his culinary odyssey, he warmly offers a unique "culinary accolade" - his unwavering dedication to the art of cooking, a journey that has spanned over three decades. This enduring commitment is a testament to his unrelenting passion for crafting exquisite dishes that captivate the senses.
